Whisky, Thyme, & Ginger Lemonade

Ingredients

1oz Forager Botanical Whisky from 40 Creek Whisky

1/2oz Thyme and Ginger Simple Syrup

1/4oz Fresh Lemon Juice

2oz Soda Water


Thyme & Ginger Simple Syrup

Small Bundle of Fresh Thyme or about 2TBP Dried

1 Inch Fresh Ginger

1 Cup White Sugar

3/4 Cup Water

1/4 Cup Lemon Juice

Add everything to a sauce pot and bring to a boil then simmer for 10 minutes on med/low heat. If it starts to get too thick lower the heat and add a bit more water. Once it has simmered cut the heat and leave to cool and infuse for another 10-15minutes then strain.


Method

Add everything except the soda water to a shaker over ice and stir until well chilled and slightly diluted. Pour into your glass of choice and top with soda water and garnish with fresh thyme or a wheel of lemon!
