About me

My name is Avery Rouse and I am a purveyor of craft cocktails and all things strange. I have been passionate about food and flavour combinations since I was a child. I was always experimenting with cakes and fondant or making dinners for my family. I was gifted a molecular gastronomy kit when I was in high school and this is when my love of flavour and science took another turn.

In university my interests changed from food to cocktails and I focused on developing my palate and learning more about the craft spirit industry. Along the way I started developing cocktails for both personal enjoyment and industry events, as well as developing cocktails featuring products from the distillery I was working at. While working at the distillery I further developed my skills and love for spirits and the industry as a whole. I worked in the tasting room providing personal tasting experiences and working the local farmer markets which helped me make community connections.

To further my education and hone my skills I completed a bar tending course. Now that I have graduated university my future desire is to train as a distiller because the way science and art come together to create spirits fascinates me and has been a life long love affair for me.
