Chai Simple Syrup

Ingredients

3 Cups White Sugar

3 Cups Water

3-6 Sticks of Cinnamon

4-6 Whole Cloves

4 Whole Cardamom Pods

1 TSP Allspice

1/4 Cup Candied Ginger

4 TBSP Loose Leaf Black Tea

1 Vanilla Pod or 2 TSP Vanilla Extract

Optional:

to make this into a pumpkin spice syrup add 3-5 TBSP of pumpkin puree. If you do this make sure to store your syrup in the fridge and use within 2 weeks of making it.

Method

If you’re using a whole vanilla pod cut it open and scrape out all the seeds with the back of your knife. You can also add the pod into your syrup but I like putting it in a jar of sugar to make vanilla sugar for other uses. Once you have all the seeds out of your vanilla pod add all your other ingredients into a pot and place on medium-high heat. When your mixture starts to boil drop the temperature down to a low simmer and leave for 20 minutes stirring occasionally. The longer you let it simmer the stronger the flavour will be. Leave to cool completely and infuse more then strain into a clean jar and store in the fridge.

Bare in mind, all the ingredients and quantities listed above are to my personal preferences so feel free to change what you need to to make it yours.
