Ingredients

1oz Coconut Oil Washed Anejo Rum

1/2oz Coconut Rum From Sons of Vancouver

1/4oz Bird’s Eye Chili Vodka From Sons of Vancouver

3 Drops Pineapple and Star Anise Bitters from Mrs.Betters Bitter’s

1/2oz Lime Juice

2oz Pineapple Coconut Juice

Method

Add all ingredients to a glass and stir together, top with crushed ice and serve with a wheel of pineapple and a reusable straw.

Coconut Oil Washed Rum

Fat washing is often used in cocktails to add extra flavour and a decadent richness to any cocktail. You can use any form of fat for this process and I plan and releasing a full blog post about this process in more detail, this is just the quick and dirty version.

Ingredients

1/2cup coconut oil

1cup Rum

Method

Melt the coconut oil in the microwave or on the stovetop. While the coconut oil is melting measure and pour the rum into a container with an airtight lid. Once the oil is completely melted pour it into the container with the rum, put the lid on and make sure it is tightly closed then shake it. Place the mixture in the fridge for a few hours or overnight until the coconut oil has resolidified and is in a block on top of the rum. You can just stab the block of oil and pull it out, it can be saved and used again later. If there are any residual pieces of oil in the rum you can strain them out with a fine strainer or coffee filter.
